Bella Lucia Gluten-Free Pizzelles began five years ago when founder Maryann Petta Cook experimented by substituting gluten-free flour for wheat flour in her pizzelle recipe. The rest, she says, was history, and soon a local natural food store began selling her cookies. After just a few months, the cookies were such a hit that customers began asking for them by name!

Chia seeds have been a popular source of energy and nutrition for centuries – dating back to the Aztecs and other pre-Columbian cultures of Mexico. The seeds are known as ‘hydrophilic’ because they can absorb 10 times their weight in water. The gelatinous substance they form when water logged is soothing to the digestive tract, beneficial for keeping the body hydrated, and helps maintain electrolyte balance.
Chia seeds are a great source of fiber, and they promote good digestion in the body, contributing to a healthy colon and decreased exposure to harmful toxins. The seeds have also been known to slow down the body’s digestion of carbohydrates to help the body stabilize blood sugar levels. In addition, they’re a great source of Omega-3 fatty acids, boron, phosphorus, manganese and zinc.
For your customers, chia seeds can be a great yogurt or breakfast cereal topping. Bake them into muffins or pancakes, or add them to salads and smoothies. Tonya’s Gluten Free Soft Pretzels

Tonya Bernard’s venture into gluten-free baking started when her young daughter Cailie was diagnosed with celiac disease. Cailie suffered extreme malnutrition and weight loss before doctors discovered her gluten intolerance, and Tonya wanted to be sure her daughter could enjoy the same lifestyle as other children regardless of her disease.
When Tonya herself was diagnosed with celiac disease shortly after Cailie, the pair searched high and low for delicious gluten-free baked goods with no success. That’s when Tonya decided to begin experimenting with gluten-free recipes on her own.
By the time her daughter reached kindergarten, Tonya had successfully developed a recipe for gluten-free bread, but she still missed the buttery taste of an old-fashioned soft pretzel.
